Recipe type: Lunch
Prep time:  10 mins

Serves: 4 servings

A delicious answer to tuna salad--without all the 'fishy' ingredients.
Ingredients
  • 15 oz. can of chickpeas
  • 2 stalks of celery
  • 1 green onion
  • 2 T. dill relish
  • 2 T. vegan mayo
  • 1 T. nutritional yeast
  • 1 T. soy sauce or tamari
Instructions
  1. Drain and rinse can of chickpeas. Pour into small bowl and mash chickpeas. I use a pastry blender but a fork would work.
  2. Chop up celery and green onion and add to bowl of chickpeas.
  3. Add remaining ingredients.
  4. Serve on bread, in a wrap or on bed of lettuce, or just eat with a spoon if you can't wait.

Hi, I'm Andrea! I love following a plant-based diet and love even more sharing that love with other people. My family and I began our plant-based journey in June 2013. Since that time, I've learned a lot about making this way of eating work while living a busy life. I hope you enjoy checking out my site and learning a lot about where it all began!
